Hi JJ:
This is the forum for FS Instant Approach which has no voices, but I think you may be asking about FSFlyingSchool? 
FSFS PRO has several different categories of speech which come from the instructor - these can all be tuned off at the pilots screen using the "disable sound" option, but there are several other options at that screen and indeed more at the settings screen which has 3 categories of speech as options.
This is all described in detail in the free manual which is installed on your PC when you install the program.
